Do you sell food at the fair?

For testing, you can work with smaller lots and use your home frying pan on a few pieces. Producing it for sale, use a commercial deep fryer. Suitable cheeses include Mozzarella, Pepper Jack, Swiss, Cheese Curds, any cheese that will stay in a block when it’s cut and battered.
2 pounds of cheese, cut into finger-size blocks.
5 ounces of beer
5 ounces of any kind of pancake mix
Make a fairly runny batter. Coat each piece well, lay the pieces out on plastic wrap or parchment, and chill in the freezer for an hour. Drop one or two pieces gently and carefully into heated oil, 425 to 450 degrees. Remove when lightly browned, and drain. Serve with marinara sauce, ranch dressing, or mustard, Sriracha, jelly, almost anything.

Cornbread and Honey Butter.
Are you selling food at the fair? Nothing does so well to pair with many foods as a good hot square of Cornbread. That’s a quick bread made with baking powder instead of yeast and it’s made from a batter instead of dough. You can make it yourself easily in large pans and sell it to a happy and eager crowd. And this way it’s really popular.

The best baking pan is a shiny uncoated metal pan. These will give you a tender crumb and golden-brown crust. This recipe is for a deep-walled half-sheet size pan, 9”x13”. You’ll need:
2 ½ cups yellow cornmeal
2 cups of flour
½ cup sugar
2 Tbsp baking powder
1 tsp salt
2 cups buttermilk
2 large eggs
½ cup melted butter
Preheat your oven to 400 degrees and grease your pan generously. Then mix the melted butter, buttermilk and egg with a wire whisk in a deep mixing bowl until the result is fully combined. Stir in the dry ingredients just until everything is moistened, but a few lumps are fine. Overmixing this batter can lead to a dense or even tough result, so stop stirring as soon as the flour is fully incorporated. Since this quick bread relies on baking powder to rise, it should be baked immediately. Pour the thick batter into your pan and spread it evenly all the way to the corners with a spatula. Bake for 20-25 minutes until the top is golden and a toothpick inserted in the center comes out clean or with just a few moist crumbs. Start checking for doneness at the minimum bake time. It’s ready when the top is golden brown and the sides pull away from the edges of the pan. Serve warm with Honey Butter. It goes well alone or with soup, chili or beans.
Honey butter is super simple to make. Start with softened butter and your honey butter will be ready in 5 minutes! Just leave two sticks of salted butter out at room temperature for an hour or longer. Use a hand mixer to combine them with 4 tablespoons of honey. Portion the result into small disposable cups and refrigerate so it stays stable over time. Supply a tiny wooden spoon to spread the butter.

To get the most flavor the best way is to fry it in a bit of oil until the meat is crisp at the edge, then top it with American cheese and serve it on a hamburger bun with regular yellow mustard. Sausage and Peppers
1 pound of fresh mild Italian sausage cut to bun length
½ or more of a yellow onion, coarsely chopped
½ pound or more of Green Bell Peppers, seeded and very coarsely chopped
Oil if you need a bit to start the cooking
In a large heavy skillet or on a large flat grill, fry the sausage over medium-low heat, covered until it releases some of its own fat. When the sausage releases some grease, push the sausage to the side and fry the peppers and onions, tossing to coat with the fat. This gets the sausage flavor through the vegetables. Continue to cook all of it low and slow. It is very important that nothing blackens. When the sausage is done through, and the peppers and onions are thoroughly cooked, soft with no crunch at all, serve the sausage on rolls or buns topped with the cooked onions and peppers plus yellow mustard if desired.

Whisk together:
1 cup flour
1 cup water
1 teaspoon baking powder
¼ teaspoon salt
¼ cup sugar
1 egg
Heat at least 1″ of oil to 375° in a deep fryer or a heavy skillet. For each serving carefully fill a large funnel with batter or use one of the bottom-pouring pitchers used for degreasing hot stock. If using a funnel, place one finger over the hole in the bottom. Over the hot oil, carefully remove your finger from the funnel, letting the batter run out into the hot oil. As it leaves the funnel make circular shapes with the batter. For best results contain the spread of the shape inside a metal ring set on the bottom of the pan. Cook for 1 minute, then using tongs, turn to cook the other side until it’s all golden brown, about another minute or so. Drain on paper towels and add topping. You serve these warm topped with a dusting of powdered sugar or canned cherry pie filling, apple pie filling or vanilla ice cream.

You need people to hire you for your talents.
Here are just a few hints to sell yourself better.
Do you understand what that person really wants? Whatever that is, price is a factor, so start with the packages you offer. When I was working, I had a sheet showing high-end, mid-range and low-end packages, and discussed the prices I could offer last.
Explain what goes into your pricing. After you touch on your labor, materials, travel and the like it may change their perspective.
Remember to listen and draw out what matters most to them in conversation. Even if their budget is lower than your prices, you might upsell them on things that are important to them.
Keep your online presence consistent. Your social media, your printed materials and your website all must be kept updated and have your phone and email address on every page. How often I’ve seen a restaurant online without any idea of their address or phone number until I’ve searched to find it. I don’t want to look for an “about us” page, I want to see it right there.
Do them a favor, if you can. That’s why you sometimes get free labels in the mail from charities looking for a donation. That increases the likelihood that you’ll see the charity in a favorable light. Offer them a coffee, a ticket, an introduction, whatever you can think of. But be careful. Professionals may evaluate a full performance of yours and see it as a confident sample and be moved to respond. But the public, who can’t offer you anything but a single day’s work, if they see it once they won’t want to see it again.
Make the other party see you as an authority. Find ideas you can support to do that, either recommendations from those who support you or recommendations from people you’ve worked for in the past.
What you can do, for the general public and for professionals, is create a video highlight reel, and put that on Youtube. Horizontal video, 360p is enough, and don’t make it too long, two minutes should be plenty, to give them a sample just enough to leave them wanting more. Then embed that on your website. Youtube has an easy process for getting the link (here’s the Youtube studio link) to embed those videos (and be sure to write that down so you can share it.) It’s all free and it’s easy to do, you don’t even need special software. With this, your special qualities can be easily seen and shared. And don’t forget to update it to keep your content fresh!
Budgets are flexible. These people think first about price because they’re trying to understand if you fit their budget. Give them the knowledge they need and you’ll be their friend, especially if at a strategic point you become a little flexible on your end, so build some price flexibility into your plan … you know, sir, I could consider this lower price just once, the first time.
I hope this makes your negotiating skill a little sharper. You deserve what you’re really worth, and I hope this helps you actually get it.

Deep-fried Ranch Dressing

In a bowl, combine
1 cup of plain Greek yogurt or ½ cup of real mayonnaise and ½ cup sour cream
1 cup cream cheese
1 teaspoon granulated garlic
¼ cup minced parsley, preferably Italian flat-leaf parsley
Mix these together and taste the result to check the flavor, and if you need to, add some more dried ranch seasoning. Mix these thoroughly and drop by spoonfuls onto a parchment-lined baking sheet, then put them in your refrigerator for a while or if you’re careful into your freezer just until they’re firm.
Then get ready to coat the portions. Put 1 cup of all-purpose flour in one bowl, beat 2 large eggs in a second bowl and put 1 cup panko breadcrumbs into a third bowl.
Remove the chilled ranch bites from the cold. Take each one and roll it in the flour. Be sure it’s fully coated. Then dip it into the beaten eggs and let any excess drip off. Finally coat it in breadcrumbs.
Heat the oil over medium-high heat till it reaches 350°F. Carefully add the breaded ranch dressing bites to the hot oil in batches, making sure not to overcrowd the pan. Fry about 2 to 3 minutes or until they are golden brown and crispy, turning occasionally for even cooking. With a slotted spoon or a spider, move the fried bites to a plate lined with paper towels to drain. Serve the finished deep fried ranch dressing bites warm either with some ranch dressing or hot honey for dipping.
