    On this episode, we pick their brains to learn about why they love coffee cocktails, how they create a balanced coffee cocktail, and how they create the perfect coffee cocktail based on a person’s particular tastes.

    The Recipes!

    The Black Rabbit!

    Ingredients:
    1 oz (1 part) Aperol
    1 oz (1 part) Gin ( Preferably Light on the juniper ex. recommend Hendrick’s or the like)
    1 oz (1 part) "Red Vermouth" - Cocchi Americano or Cocchi Rossa or Cocchi Vermouth di Torino
    1 dropper (0.7g) saline solution (1 part salt to 5 parts water)
    15g ground Rwandan coffee on a medium-fine setting (ideal for a pour-over), which I got from.....

    To Prepare it, you…
    Start with ground coffee in a decanter or container.
    Add alcohol.
    Add ice and stir for 45 seconds.
    Srain into separate decanter or container stir until coffee is combined.
    Let it sit for 2 min.
    Place coffee dripper over a glass with ice (Ideally one large cube).
    Pour over wet filter paper coffee filter - I used a v60 - into the glass of ice and garnish w/ an orange peel or flamed" orange twist.
    Drip should take approximately 2 min .

    The Toasty Mexoni Negroni.

    Ingredients:

    1 teaspoon Apricot jam
    50ml - Mezcal - Scott used Mescal Verde (for more of a middle of the road smoky flavor) 25ml - Cold brew Coffee - If you make your own, a ratio of 120 g per liter is ideal - Scott used Dave Jameson's roastery's coffee - Mexico SIPRO Natural
    25ml - Asterly Brothers Estate Sweet Vermouth
    25ml - Campari

    To Prepare it, you...

    Combine mezcal, Campari, vermouth, cold brew in shaker or container.
    Add a teaspoon of apricot jam.
    Stir till the jam disperses.
    Strain into into a chilled glass with ice.
    Express the oils from an orange peel over the beverage and then drop the peel into the glass.

    Women’s Underappreciated Role on Coffee Farms
    When you picture a coffee farmer, who do you have in mind? For many people, it will be Juan Valdez, the symbol of Colombia’s National Federation of Coffee Growers, with his thick moustache, sack of beans and trusty donkey.

    But women play a crucial role on coffee farms which often gets overlooked. This week, Jools is diving into the responsibilities they take on, some of the struggles they face and how we can hope to overcome them.

    She will speak to three women about their stories and experiences: Ana María Donneys and Paula De Rosenzweig, two women growing coffee themselves, as well as Blanca Castro at the International Women’s Coffee Alliance.

    Why is there a lack of representation at higher levels in the industry? How are traditional gender expectations holding women back? How might things change in the future?

    These are some of the questions we’ll be asking. So join Jools and James as they strap in and prepare to break the glass ceiling. Or perhaps the glass coffee cup…

    Ethiopia's Gift to the World
    In Ethiopia, the birthplace of Arabica coffee, Ethiopians spend hours roasting and brewing coffee in their living rooms.

    But, have you ever heard of the Ethiopian coffee ceremony? If not, you are not alone.

    Get ready, dear listeners, because James is going to take you, Scott, and Jools out of your regular coffee routine to see how coffee can be drunk quite differently.

    First, we travel to Italy as James roasts coffee beans with his family’s long-time friend and family helper, a lovely Ethiopian woman named Elisa.

    Then, Jools and Scott get treated to a coffee trader at the Ethiopian Embassy with the ambassador and Jame’s friend Ethiopian coffee exporter Michael Haile.

    And, we also hear from an Ethiopian expat, Mekdes, who grew up with the ceremony at home and still practices it herself.

    The Oat Debate: Scott’s Milk Quest
    Have you ever noticed that there always seems to be a new plant-based milk? For about 20 years, Scott’s wife Rachel has always been able to enjoy soy milk with her coffee while other plant-based milks have fallen in and out of favor.

    However, lately, soy milk seems to be disappearing and is being replaced by the “new kid in town”: oat. And, when Rachel asks questions in coffee shops about the move away from soy, she frequently gets told that she should not be drinking soy milk because its bad for the environment. But, is that actually true? If coffee shops do not carry soy to be more sustainable, then why are they still carrying dairy?

    To dive deeper into this, Scott attended the Caffè Culture Expo to get a better understanding about how cafe owners are choosing their milks and how they feel about sustainability.

    Then, Scott and Jools deep dive into current research through a website called Our World in Data and talk to environmental sustainability scientist and consultant Dr.
    Isaac Emery to get an expert opinion.

    Busting Coffee Myths: Round Two!
    We surveyed you. You asked us for myth-busting (again). So myth-busting you shall get!

    But, this time, we are not just busting up confusing coffee conundrums; we are introducing a framework (“Ah-Key!”) that will help you bust coffee myths (and all the other misinformation that you will encounter).

    Now, let’s get to kicking the nuts of those misleading myths.

    Did you perhaps have too many bevvies last Friday? Did someone offer you coffee to sober you up? If so, you may have indulged in a myth! Jools brings back friend-of-the-show research scientist and professor Dr. Danielle Gulick to share what she found from studying the effects of alcohol and caffeine.

    Ever spotted the coffee beans on the perfume counters at your favorite department store? Supposedly, sniffing them will clear your nasal palate. But is that true? Luckily, Scott has a new hobby: making perfume (bet you it smells like coffee). So he chatted with his perfumery professor, Sarah McCartney the founder of perfumery 4160Tuesdays.

    Finally, since putting out The Lie of Direct Trade episode, we have known that commodity coffee doesn’t always help farmers make the most money. So, does that mean that specialty coffee helps farmers make more money? James speaks to former barista now coffee roaster Tim Wendelboe to clarify some deep misconceptions.

    The Lie of Direct Trade
    Have you ever noticed your daily caffeine fix tastes that little bit sweeter when you know the coffee has been ethically sourced?

    The term “direct trade” has cropped up all over the place in specialty coffee in recent years and, on the face of it, would seem to imply just that.

    But what does “direct trade” actually mean? And has anyone — let alone coffee farmers — really benefited from it?

    In the final episode of series 3, James takes Scott and Jools on a journey into how coffee actually gets traded.

    Chad Trewick from the Specialty Coffee Transaction Guide shares his first hand experience of being in the direct trade vanguard. Chris Kornman, author and Director of Education at The Crown, explains the rise of evangelists with the mantra of cutting out the middle men. And Erica Koss, co-author of the Specialty Coffee Association’s sustainability course and Research Associate at the Institute for Development Studies at the University of Nairobi in Nairobi, reveals some of the limitations of the direct trade ideal.

    And, as a parting gift for the summer, James offers tips on how YOU can identify those roasters who are trying to do right by the farmer.
