Dan On Tap

Inspired by the folks at The Wicked Good Compound, and encouraged by media personality and friend ScottyJ, we decided to tread into The Podosphere on 7/3/2006. “Life On Tap” is just that: our lives through our eyes (or rather all senses) and the appreciation of some of our favorite interests: beer, food, wine, spirits and experiential immersion. There are a tremendous amount of experiences that Sheryl and I haven’t had, and we look forward to sharing those with you, the listener/viewer.

    Episode # 356: Food For Thought

    Dan doubles down with another 500ml bottle from Threes Brewing: Food For Thought (2023), a blended saison made with recovered bread.

    INGREDIENTS: Recovered Bread; German Pilsner Malt, German Munich Malt, American Malted Rye; German Saphir and Tettnanger hops
    ABV: 6.5%

    Appearance

    Light straw yellow with a beautiful, fluffy, white head.

    Aroma

    Crusty bread hits first followed by lemon juice and zest.

    Taste

    Lemon all the way mixed with a bready/grainy element with a crisp acidity.

    Mouthfeel

    Soft carbonation is foam-like, which lightens the mouthfeel, and mixed with the acid, doesn’t make it too dry.

    Overall

    I think this a great aperitif beer to have with some snacks during meal preparation (by the grill came to mind). Pairing-wise, I was thinking about Thai chili chicken wings, fried calamari, and curry puffs.

    Episode # 355: Incredulous Laughter

    Dan cracks open a 500ml bottle as a detour from cans with Threes Brewing Incredulous Laughter, an Oak-Aged Biere de Miel.

    STYLE: Oak-Aged Biere de Miel
    INGREDIENTS: German Pilsner malt, Thrall Family Malt Raw Buckwheat, Wheat malt; German Saphir hops; Buckwheat Honey
    ABV: 6.0%

    Appearance

    Bright yellow/gold with a thin, white head.

    Aroma

    Honey hits first, but behind are earthy and herbal elements mixed with the fruity red wine and oak/wood character.

    Taste

    Hint of tartness hits the side of tongue and not as sweet as expected, but the honey and malt flavor are still present. Earthy and herbal notes continue from the nose, and even a hint of minerality on the finish.

    Mouthfeel

    Light on the mouthfeel, and surprisingly dry.

    Overall

    A pretty nerdy beer, in my opinion, which can totally be enjoyed by itself. If you were pairing, some younger, creamy cheddars would hit the spot, and I was also thinking about a nice chicken salad.

    Dan waxes poetic over the Czech lager renaissance happening in the US over a can of Indelible from Threes Brewing.

    INGREDIENTS: Czech Sladek hops

    Appearance

    Super dark brown with a beautiful, off-white head.

    Aroma

    Fruit and malt lead here, with cocoa powder, raisins, dates, and some roastiness.

    Taste

    Malt sweetness followed by roastiness before leading back into the cocoa powder before finishing on dried fruit.

    Mouthfeel

    Silky and velvety across the tongue with soft carbonation coating it all the way.

    Overall

    I love that we are experiencing a Czech lager renaissance in the US right now…please keep them coming, brewers! Pairing-wise, I was leaning towards meat and poultry or the obvious cheese/charcuterie plate, but stew is what my palate was craving specifically.

    Episode # 353: Other Ephemera

    Dan pops open Other Ephemera, a hoppy lager made with pilsner malt, malted wheat and Vista and Moutere hops, from Threes Brewing.

    INGREDIENTS: Premium Pilsner malt, Malted Wheat; Vista, NZ Moutere hops
    ABV: 4.8%

    Appearance

    Medium yellow/gold with a fluffy, white head of mixed-sized bubles.

    Aroma

    Fruit dominate the nose, with a mix of lime, melon, and candied kiwi, followed by a hint of dankness.

    Taste

    Lime really comes through from the nose to the palate with a floral note rejoining a residual melon before a hint of hop bitterness on the finish.

    Mouthfeel

    Light mouthfeel and fairly dry with a pleasant carbonation.

    Overall

    This is a really intriguing but lighter lager that really showcases the hops. I was feeling Chicken Satay or peanut sauce-based dish for pairing.

    Episode # 352: The World We Live In

    Dan’s nose and palate is enveloped and awed by The World We Live In, a Foudre-Fermented Czech Pilsner from Threes.

    ABV: 4.5%

    Appearance

    Light to medium yellow with a thick, beautiful, white head.

    Aroma

    Fruit hits the nose first, with a light cherry/berry and hint of peach/apricot, followed by some earthy and herbal hop notes and a touch of honey.

    Taste

    Fruity and herbality continue from the aroma through the mid-palate with some fragrant, floral notes, along with a hint of woodiness and vanilla from foudre.

    Mouthfeel

    The foudre really presents here, as the smooth mouthfeel coats your palate with the soft carbonation and adds to the body.

    Overall

    I really enjoyed this one, as it showcases how aroma, flavor, and mouthfeel do not need to be abandoned in a sub-5% ABV brew. Pairing-wise, you could go light Thai dishes like papaya salad, Mexican, and even spaetzle.

    Episode # 351: Wish You Were Here

    Dan cracks open another collaboration beer from Threes. This time, it’s their first American Pilsner with Green Bench, Wish You Were Here.

    Appearance

    Super clear and gold in color with a half-inch, fluffy, white head.

    Aroma

    A mix of earthy, fruity, and herbal notes with lemon, earthy spice a la sage, and some residual sweetness a la Asian pear.

    Taste

    Corn-sweet notes hit along with earthy/floral notes from the hops with a lovely minerality.

    Mouthfeel

    Fairly dry on the finish with a smooth mouthfeel and soft carbonation.

    Overall

    This was a unique brew from Threes, who generally trends German with a splash of Czech with their lagers. Pairing-wise, you could go a number of different directions, but I was craving a grain bowl with farro or quinoa and sweet potato etc.

    Dark yellow/light orange in color and fairly hazy, with a fluffy, white head.

    Aroma

    Funk hits first, with tropical notes of overripe pineapple and guava paste.

    Taste

    Fruity hop notes lead into earthy/funky notes and overripe kiwi.

    Mouthfeel

    Dries the tongue, but has a good body and mouthfeel with a pleasant carbonation.

    Overall

    Pairing-wise, I think this could go with lighter fowl/poultry dishes, though I was thinking of a dish with chicken, sundried tomato, and mushrooms…so rustic?

    Appearance

    Crystal clear and straw to medium yellow with a white head.

    Aroma

    Lovely bread crust and biscuit with some earthy and floral/dried flower hop notes.

    Taste

    A nice honey-like sweetness enters and joins the aroma notes on the palate along with an earthy minerality coming in later.

    Mouthfeel

    Silky on the palate, wrapping around the tongue with soft carbonation.

    Overall

    Congratulations and Happy Anniversary to Threes!

    I could definitely see myself having a few of these as part of a celebration or sorts. Pairing for this is clearly German beer hall fare, though anything that isn’t too spicy or full in flavor would probably work.

    Episode # 348: Satin Jacket

    Out of the cold, Dan seeks a little rest and relaxation with a Czech Dark Lager with Return Brewing Satin Jacket.

    Appearance

    Dark brown with mahogany on the edges near light, with a light tan, frothy head.

    Aroma

    Chocolate, caramel, and almost a blond coffee roast on the nose.

    Taste

    Aroma notes come through, though the caramel presents as darker, as does the coffee roast note. I also got a toasty pumpernickel-like note to meet the earthy/herbal notes from the hops.

    Mouthfeel

    Medium body and soft carbonation contribute to a creamy mouthfeel.

    Overall

    This brew totally hit the spot on a cold day, though I suspect I would enjoy this on any day in a comfortable chair. Food-wise, I was feeling a burger or some game like venison or veal tenderloins, but this could be pretty versatile with some well-spiced options.

    There are some styles that Dan always picks up when he sees them. ESB is one of them, so Fifth Hammer Brewing Co. Unlicensed was a great fit.

    Medium gold with a white, super-fluffy, effervescent head.

    Aroma

    Earthy and herbal notes from the hops with some dark bread from the malt.

    Taste

    Light, herbal hop bitterness typical of English hops with bread crust hitting the mid-palate and beyond.

    Mouthfeel

    Carbonation brings a lovely mouthfeel with a light to medium body.

    Overall

    I could definitely see myself having a few rounds of these either after work or to kickoff a night for sure. Food-wise, most bar fare would work, but a chicken pot pie was speaking to me at the time.
